INSPIRATION

The inspiration for our Manti concept came from a cooks train tour that founder Mike and his team took from London to Istanbul to seek out exciting new tastes, where the Turkish dumplings were their prized discovery. We adapted the recipe to accommodate all dietary requirements in the restaurant and on the stall as in Turkey the common filling is lamb based.

HISTORY

Dating all the way back to the Mongol Empire, this dish has always been associated with nomadic peoples as the dumplings lent themselves well to being prepared by hand and cooked over a campfire. Captivated by the historic story and the taste of these dumplings, Michael and his chefs were keen to bring this dish back to London and help continue its culinary journey.

BREAKING BARRIERS

Mike and Ollie teamed up with Breaking Barriers www.breaking-barriers.co.uk to find skilled refugees arriving in Britain from Syria who were familiar with the preparation to make the dish for the stall. It went a small way to helping break down the barriers refugees face when trying to find meaningful work in Britain, and celebrates the cultural and culinary transfer
